Simple Green Smoothie

This is my go-to when I'm running out the door for errands at lunch.

Ingredients
  

  • 1 cup spinach
  • 2 tbsp maple syrup
  • 1/2 mango
  • 6 strawberries
  • 1/2 cup almond milk

Instructions
 

  • Blend all ingredients in blender until smooth

Butternut Squash Soup

INGREDIENTS

  • 1 large butternut squash, halved vertically with seeds removed
  • 2 tablespoons olive oil
  • ½ cup chopped shallot
  • 1 teaspoon salt
  • 4 garlic cloves, pressed or minced
  • 1 teaspoon sugar
  • ⅛ teaspoon ground nutmeg
  • Freshly ground black pepper, to taste
  • 4 cups vegetable broth, as needed
  • 1 to 2 tablespoons butter

 

Instructions:

  1. Drizzle squash with olive oil, sprinkle with a pinch of salt & pepper and roast face down on foil lined pan at 425 degrees 40-50 minutes until tender.
  2. In a large stock pot, saute shallot with olive oil for a few minutes.
  3. Add rest of ingredients and simmer for 30 minutes.
  4. Blend well with immersion blender.
Chimichurri

Chimichurri

This is an example of a recipe using the simpler method to upload Recipes (Option 1 in the Web Help Manual). In this method, you simply copy and paste the recipe into the Post Editor box on the Edit Post page. You can add images and bulleted lists, however the output of the recipe on the page is fairly simple.

Ingredients:
1 bunch Parsley
1/4 cup fresh Oregano
1 bunch Cilantro
1/2 cup chopped mint leaves
3 garlic cloves
1/2 cup Extra Virgin Olive Oil
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/4 teaspoon red pepper flakes

Instructions:
Finely chop parsley, oregano, cilantro and mint. Mince garlic. Stir together all ingredients and adjust seasonings to taste.
