Simple Green Smoothie

This is my go-to when I'm running out the door for errands at lunch.

  • 1 cup spinach
  • 2 tbsp maple syrup
  • 1/2 mango
  • 6 strawberries
  • 1/2 cup almond milk


  • Blend all ingredients in blender until smooth

Butternut Squash Soup


  • 1 large butternut squash, halved vertically with seeds removed
  • 2 tablespoons olive oil
  • ½ cup chopped shallot
  • 1 teaspoon salt
  • 4 garlic cloves, pressed or minced
  • 1 teaspoon sugar
  • ⅛ teaspoon ground nutmeg
  • Freshly ground black pepper, to taste
  • 4 cups vegetable broth, as needed
  • 1 to 2 tablespoons butter



  1. Drizzle squash with olive oil, sprinkle with a pinch of salt & pepper and roast face down on foil lined pan at 425 degrees 40-50 minutes until tender.
  2. In a large stock pot, saute shallot with olive oil for a few minutes.
  3. Add rest of ingredients and simmer for 30 minutes.
  4. Blend well with immersion blender.

1 bunch Parsley
1/4 cup fresh Oregano
1 bunch Cilantro
1/2 cup chopped mint leaves
3 garlic cloves
1/2 cup Extra Virgin Olive Oil
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/4 teaspoon red pepper flakes

Finely chop parsley, oregano, cilantro and mint. Mince garlic. Stir together all ingredients and adjust seasonings to taste.
